Brazilian Santos- Of the better Brazilian produced coffees, Brazilian Santos is the most familiar market name. Brazil’s hot, humid climate lends itself to be the perfect place to grow coffee. Producing less acidic beans is the direct result of lower elevation than most coffee growing areas. Brazil is one of the few countries that have weather perfect enough to successfully use the natural drying method of processing its beans. This means that the beans are dried prior to being removed from the cherry. By drying coffee beans inside the fruit, the sweetness of the fruit carries over into the perfect cup of coffee. Using the dry method, coffee will be heavy, sweet, and complex, making it a favorite for espresso blends and dark roasting. This drying method is very complicated, with longer drying times and the risk of fermentation, but it also showcases the reason Brazil is a world leader in this area.
Colombian Supremo- is the highest grade of coffee beans. After a fermentation of 24 hours, the coffee beans are washed with water then must be dried under direct sunlight, and covered during the night and when raining. The Colombian coffee bean has been recognized worldwide as being high quality and having a very distinctive taste. These beans create a medium bodied and sweet tasting coffee with a rich flavor and complex aroma.
Sumatra, Mandheling- is named after the "Mandailing" people that traditionally farmed and processed the coffee beans in Sumatra. The plants are grown in vastly rich volcanic soil. The warm climate and volcanic soil contribute to give Sumatra, Mandheling it has an herby aroma, full body, and low acidity. With a rich smooth flavor and an earthy, chocolaty flavor, Sumatra Mandheling is ideal as a dessert coffee or for those who avoid high-acid coffees but have a taste for a full body coffee.
